I like Caprese salads. I like grilled cheese sandwiches. And I most definitely like grilled Caprese sandwiches! One afternoon a few weekends ago we were scrounging around the apartment for something to eat for lunch. I’ve recently turned Dana on to grilled cheese sandwiches. Nothing fancy. Just white bread, sharp cheddar cheese and butter. How she survived childhood not liking grilled cheese, I’ll never understand. Anyways, back to this particular weekend. Like most days, grilled cheese sounded pretty enticing, but that day we spent a few extra minutes to pick a few basil leaves, slice a tomato and some mozzarella and it was worth the effort. Substitute olive oil for the butter and rub a garlic clove on the bread and you’ve got yourself one hell of a sandwich.
Its like an Italian flag…on a sandwich!
